Tastes, textures and temperatures are the watchwords at this cosy restaurant, which has moved up 10 places on last year. Local seafood from the south-west Zeeland province and seasonal herbs from the kitchen garden are used to dramatic effect. Dishes include the likes of signature oysters prepared in six ways, and a stunningly presented red mullet with green vegetables, seafood, shellfish, aioli and bouillabaisse jus. Yum.
