LES JARDINS SAUVAGES
Part of über eco-hotel La Grée des Landes, this bright, zen restaurant is housed in a low-carbon building set amid 10ha of landscaped park. The kitchen uses mostly organic ingredients, and obtains its vegetables, fruit and herbs straight from its own garden. Expect contemporary French dishes like snail salad with bacon and chestnuts, and mackerel lasagne with garlic jus.
