IN A HAMMAM
After a day in the medina, spend a couple of hours getting soaped with savon beldi (a brown goo used to soften the skin), drenched with hot water and massaged into a state of bliss. Riad Laaroussa's hammam (pictured) offers a superb take on this traditional ritual.

NEJJARINE MUSEUM
When merchants with camel trains plied the trade routes, they would have rested in a fondouk (caravanserai) such as this one. Now a wood museum, it features carved cedar wood, sculpted plaster and mesmerising mosaics. Don't miss the beautiful fountain just outside.
