His new restaurant with rooms is a four-storey 1800s townhouse refitted with swish designer furnishings. For views over Edinburgh, take room 21, or for a bathroom big enough to swing a tiger, room 12. Five courses of Kitching's witty, inventive cooking will set you back £60 (€70) a head.
